Paleo Bacon and Leek Frittata (Thermomix)

Getting sick of fruits, smoothies and Paleo granola? This recipe may be a refreshing change. Cook the frittata the night before and reheat the next day. It should last for a few days. It's also perfect as a snack or for lunch. If lunch, compliment with some salad and avocado. The instructions use a Thermomix however this can easily be done without one.

  • 8-9 eggs
  • 1-2/3 of a Leek roughly chopped. Note: If you aren't using the Thermomix then chop a little finer.
  • Handful of Dried shrimps
  • 3-4 cloves of garlic
  • Pinch of salt & Crack Pepper
  • Dried Rosemary
  • Pinch of Paprika
  • Coconut oil for cooking
  • 2 strips of Bacon
    • Step 1: Preparation of Egg and Bacon

      1. Preheat oven to around 180 degrees celsius.
      2. Beat egg until fluffy.
      3. Add pepper, salt, paprika and rosemary. Roughly beat again until mixed. Place bowl aside.
      4. Pan fry bacon until crisp.
    • Step 2: Preparation of Leek

      1. Using TM – Chop up garlic and dried shrimps. 2-3 sec on Speed 7.
      2. Add tablespoon of coconut oil. Varoma for 2 minutes.
      3. Add Leeks. 100 degrees, reverse mode, soft stir for 8 minutes or until soft.
      4. Add salt and pepper and then blend at speed 4 for a few seconds. I like my leek chunky, hence the speed selection.
      5. Oil your tray. We use coconut oil spray for convenience. You can buy this from Coles.
      6. Spread your Leek evenly in the tray and pour in the beaten egg.
      7. Cut the bacon into small pieces with a scissors, placing them on top.
      8. Bake for approx. 40 min or until golden brown. The toothpick test works here.

Note: If you don't have a Thermomix then simply complete steps 1-4 the manual way. That is chopping and stir frying in a pan until soft.
