Cauliflower Faux Rice

Cauliflower Faux Rice and the Thermomix is a match made in heaven. It’s super easy and the texture is just perfect.  This is a keeper and can used in any situation where you would normally use rice. Of course if you have a food processor, you can do the same thing.I'm just not sure whether the texture can be easily controlled since the Thermomix has a REVERSE mode which uses the blunt side of the blade.

  • 1 whole cauliflower – chop roughly just so that it’s small enough for the TM bowl
  • Coconut oil
  • 2 Red Shallots or 1/4 Brown Onion.

  • Pepper

Why Cauliflower Rice?

From Self Nutrition Data I found the graph below. Cauliflower provides 77% of your daily requirement of Vitamin C. Who would of thought. Now that’s much better than rice which only gives you sugar and energy.

  • Step 1: Red Shallots

    Red Shallots
    1. Chop Red Shallot or Brown Onion in the TM bowl.

      Speed 8 for 8 seconds or until the motor sound changes.

    2. Scrap the sides of the TM bowl so that the Shallot or Onion falls back to the bottom.

      Add 1 tablespoon of coconut and varoma for 2 min on Speed 1.

  • Step 2: Add Cauliflower

    Add half of the cauliflower chopped into small pieces. Chop at speed 5 on REVERSE mode. Be weary not to over chop. Empty the TM bowl. Then add the rest of the cauliflower, once again chopping at speed 5 REVERSE mode. Note: Avoid overloading the TM bowl. Half full is good. If you're greedy and try to stuff more in, the TM will have difficulty cutting all the cauliflower to the right consistency.
  • Step 3: Cook

    1. Option 1 - TM

      Cook at 100 degrees, reverse mode at speed 1 for 7-8min or until soft. Note: Halfway through the cooking process, add 1-2 tablespoon of concentrated vegetable stock, salt and pepper.

    2. Option 2 - Wok

      Stir fry in a wok. This option is preferred if the amount of Cauliflower is way too much. Alternatively use option 1 however cook in 2-3 batches.

How to get the right Cauliflower Texture?

Avoid overloading your TM bowl. About 1/2 full is the perfect cauliflower quantity. This enables the TM to chop the cauliflower to the right consistency. The size of a cauliflower will vary so chop as many batches as required.

Flavouring

Depending on what your complimenting your Cauliflower rice with, you may NOT want Red Onions. Eg. If I am using the Faux Rice with Curry there is no point for me to mix in Red Onions. The curry already has plenty of flavours.

Sprinkling Dukka over the top can give some nice flavouring.
