Tuna and Sweet Potato Cakes

Inspired by Nom Nom Paleo's recipe, this is my version. Check out her website for more inspiration. She's one of the original Paleo bloggers. Her recipes are always consistently good and her posts are fun to read. Like with all recipes, we recommend modifying it your taste. Afterall we're all a little different.

  • Sweet Potato (the orange coloured ones)
  • Large can tuna in Springwater (drained)
  • Jalapenos (De-seed if you prefer it less hot)
  • Organic Free range eggs
  • 2-3cm of grated ginger. Use a microplane
  • 1 tbp Ghee
  • 1/2 bunch Roughly chopped coriander otherwise known as cilantro
  • 2-3 stems Finely sliced Shallots (Spring onions)
  • 1/2 a lime Lime Zest. Using microplane
  • 1 Tbp Red Boat Fish Sauce. This is a key ingredient!!
  • 1/2 tbp Red Pepper flakes
  • Preparation

    1. Preheat oven to 175 degrees Celsius.
    2. Stab a sweet potato with a knife and microwave on high for 5min or until soft. Stabbing ensures that it will not explode in the microwave.
    3. Cut the sweet potato in half. Using a spoon, scrape out the flesh. This saves you from mashing it up and gives a smoother texture.
    4. In a mixing bowl add tuna, sweet potato, coriander and shallot. Mix gently to avoid breaking up the tuna too much.
    5. Add finely chopped Jalapeno, lime zest, grated ginger & 2 tablespoon of melted ghee. Mix.
    6. Lastly, add 2 eggs, red pepper flakes, salt, pepper and a splash of Red Boat fish sauce. Quantity to your liking.
    7. Generously coat muffin tray with ghee. I emphasis "generous" as this ensures it does not stick.
    8. Bake for 20-25min. Use toothpick or chopstick to test if it is cooked.
